Pumpkin Pie Overnight Oats

There is just something about fall that makes me happy. I love the pumpkins, the beautiful fall foliage, the cool, crisp mornings, and especially all the cozy food that comes with the season. And if you know me, you know I love anything pumpkin!

When I was pregnant with Rhett, I craved pumpkin the entire time. I baked so many pumpkin recipes that we ate A LOT of pumpkin. Weston was convinced that if I kept it up, we were all going to turn orange and start looking like pumpkins. 😂

So naturally, pumpkin has always had a special place in my heart. These Pumpkin Pie Overnight Oats are one of my favorite ways to enjoy those warm fall flavors for breakfast. They are creamy, lightly sweetened with honey, and packed with pumpkin, chia seeds, hemp hearts, and pumpkin pie spice.

The best part is that you can make them the night before, so breakfast is ready and waiting for you in the morning.

Basically, pumpkin pie for breakfast—and I’m perfectly okay with that.

Ingredients

  • 1 cup rolled oats

  • 1 cup milk or coconut milk

  • ½ cup Greek yogurt

  • 3 tablespoons honey

  • ½ cup pumpkin purée

  • 3 tablespoons chia seeds

  • 1 tablespoon hemp hearts

  • 1 teaspoon pumpkin pie spice

  • 1 teaspoon Savannah Ray Farms vanilla

Instructions

Mix the Oats

Add the rolled oats, milk, Greek yogurt, honey, pumpkin purée, chia seeds, hemp hearts, pumpkin pie spice, and vanilla to a bowl or jar.

Stir well until everything is thoroughly combined.

Refrigerate

Cover and refrigerate overnight, or for at least 4 hours. The oats and chia seeds will absorb the liquid and create a thick, creamy texture.

Serve

Give the oats a good stir before serving. If they are thicker than you'd like, add a splash of milk and stir until you reach your desired consistency.

Top with a little extra pumpkin pie spice, a spoonful of Greek yogurt, chopped pecans, or an extra drizzle of honey.

Notes

Use your favorite milk. I love these made with regular milk, but coconut milk works beautifully too and gives the oats an extra creamy texture.

Make them ahead. These are perfect for busy mornings because they can be made the night before and kept in the refrigerator.

Adjust the sweetness. Three tablespoons of honey gives these a nice sweetness, but you can easily adjust it to your taste.

Don't skip the pumpkin pie spice. That little bit of spice is what makes these taste like pumpkin pie instead of just pumpkin oatmeal.

Serving Ideas

I love serving these cold straight from the refrigerator, especially on a busy fall morning. For a little something extra, add a spoonful of Greek yogurt, a sprinkle of pumpkin pie spice, toasted pecans, or a drizzle of honey.

For a pretty fall breakfast, serve them in a glass jar and add a little pumpkin pie spice and chopped pecans right on top.

Fall has always felt like such a special time of year to me. Maybe it's the cooler mornings, the pumpkins everywhere, or simply all the wonderful food that comes with the season.

And after spending an entire pregnancy craving pumpkin, I don't think my love for it is going anywhere anytime soon!
