High-Protein Chia Pudding

During the hot summer months, the last thing I want after a workout is a hot/heavy breakfast. I started making this high-protein chia pudding because I wanted something that was quick, nutritious, and ready to grab from the refrigerator.
It's become one of my favorite post-workout breakfasts. With protein, fiber, and healthy fats, it keeps me full for hours while giving my body the fuel it needs after a morning workout. The best part? I can make several servings at the beginning of the week, so breakfast is already taken care of on busy mornings.
Ingredients
2 cups non-dairy milk
6 tablespoons chia seeds
2 tablespoons shelled hemp hearts
2 scoops Just Ingredients protein powder
Optional:
1 teaspoon SRF vanilla extract
1 tablespoon nut butter
Instructions
Add the non-dairy milk, protein powder, chia seeds, and hemp hearts to a mixing bowl or large
measuring cup.
Stir in the vanilla extract and nut butter, if using.
Whisk until everything is smooth and well combined.
Let the mixture rest for 5–10 minutes, then whisk again to break up any chia seed clumps.
Cover and refrigerate for at least 4 hours, or overnight, until thick and creamy.
Divide into five very full ½-cup jars or containers for an easy grab-and-go breakfast or snack.
My Favorite Toppings
I love topping mine with fresh seasonal fruit like strawberries, blueberries, peaches, or blackberries. A sprinkle of granola adds the perfect crunch, and a drizzle of honey is delicious if you like a little extra sweetness.
Notes
Makes five very full ½-cup servings.
Store covered in the refrigerator for up to 5 days.
Add a splash of milk before serving if you'd like a thinner consistency.
