Chunky Monkey Granola

Both of my kids love granola, and I got tired of trying to find one without unnecessary added sugar or oils I didn't want to feed my family. Bailey and I started making our own, and it is so incredibly easy—and you know exactly what is in it. We make granola about once a week, and this Chunky Monkey Granola is one of our favorites!
Ingredients
3 cups organic sprouted rolled oats
1/2 cup chopped peanuts
1/2 cup rough chopped pecans
1/4 cup shredded coconut, unsweetened
4 tablespoons chia seeds
1 teaspoon ground cinnamon
1/2 teaspoon sea salt (I prefer Redmond)
1/2 cup peanut butter
1/2 cup honey
1/2 cup avocado oil or coconut oil
2 teaspoons SRF Bourbon Vanilla
1 cup dried banana chips
1 cup dark chocolate chips
Directions
Preheat oven to 325 degrees and line a large baking sheet with parchment paper.
Mix oats, peanuts, pecans, coconut, chia seeds, cinnamon, and salt in a large bowl.
In a small saucepan over low heat, warm peanut butter, honey, and avocado oil or coconut oil until smooth and well combined. Remove from heat and stir in the SRF Bourbon Vanilla.
Pour the peanut butter mixture over the oat mixture and stir until everything is evenly coated.
Spread the granola onto the prepared baking sheet and press it down firmly into an even layer.
Bake for 25–30 minutes, stirring once halfway through.
Remove from the oven and sprinkle the dried banana chips over the granola. Allow the granola to cool completely without stirring so it can form those delicious chunky clusters.
Once completely cooled, break the granola into chunks and stir in the dark chocolate chips.
Store in an airtight container.
